Try It, You’ll Like It!
If you’ve been following the Farm It Forward story, you will recall that there are two sessions happening simultaneously right now. Wake County Cooperative Extension staff and volunteers are facilitating one session with produce from In Good Heart Farm, and the Inter-Faith Food Shuttle staff and volunteers are facilitating a session in the six-week Cooking Matters course with local food from The Produce Box. Four families are receiving CSA shares and participating in the IFFS cooking-based nutrition course.

For anyone, making use of all the delicious but perishable fresh produce in a CSA box can be a challenge. Our families came up with some creative ways to incorporate last week’s CSA goodies into their families’ diets. One mom added blueberries to her oatmeal for the first time! Another couldn’t quite use all the green beans, so she froze them to enjoy later this summer. A teen used the veggies to make the healthy mini-pizza recipe we had prepared in the first Cooking Matters session. And we were all blown away by one participant’s amazingly simple method of cooking corn in the microwave.
The theme for week #2 was Try It, You’ll Like, and boy did we! Using fresh, local tomatoes and red peppers from The Produce Box, all four families worked together to prepare a delicious salsa and homemade tortilla chips.
